The Simtech adaptor is suitable for the 'blade' type of SSD. The one I bought and installed was the Crucial P2 CT1000P2SSD8 1 TB Internal SSD, Up to 2400 MB/s (3D NAND, NVMe, PCIe, M.2). This one fits the Simtech adaptor and can be installed by removing the bottom cover of the Mac Mini. For that you need a Torx screwdriver like this one or similar -E.Durable Torx Security T6 Screwdriver TR6 for Mac Mini (2014-2018 Models) HDD/SSD MacBook Pro. If you need to access the spinning disk hard drive you need to go deeper into the structure and there are risks I believe to the inexperienced technician. I would suggest you look at the forums on the Macrumors website where you can find very detailed advice. The blade type of SSD gives amazing results. Maybe you should consider returning yours and replacing it with the blade version.
