I would clip each one to the circumference of a pot full of water. This rack is so much nicer and neater. It allows the hot water to circulate all around the meat. Probably a little better even-ness as a result. And it's definitely easier to insert and withdraw the packets. I made the mistake of purchasing an 18qt Rubbermaid food container. A 12 qt would have been perfect: the 18qt size is the exact same footprint, but is deeper. I will never need that extra depth, and this rack would have fit just as perfectly into the 12qt size. The steel feels solid. The divider racks fit snugly, and yet are easy to remove. It will last forever I suspect. I especially like the "hold down" rod across the top... Inevitably I leave a little air in my baggies when I'm sealing the, and the rod keeps them from floating even a little bit.
