(hex wrench, pliers, screwdriver)** A: Hi, there is a hex nut that holds the stem to the dial. I measured it, and it is 11mm. That is an unusual metric size. An adjustable wrench would work perfectly. The nut isn't very tight, so pliers would work OK.You would of course need an accurate thermometer to set it to.Boiling water is OK if you live close to sea level. At 3000 ft altitude, water boils at 206 degrees F.At Denver (mile high), water boils at 202 degrees.My thermometer did not come with a wrench. That would be a good idea.Mine was set close enough for cooking, maybe not for lab work. **Q: can this thermometer be left in an oven during the cooking of a roast** A: No - Found this out too late. I was under the impression that this was a conventional type of oven thermometer that you insert and leave in the roast while it is cooking. It melted! **Q: Am I going to have to recalibrate this a lot due to the fact that CDN stuck the tool to do so at the end of the sleeve instead of side? It didn't come with instruction for calibrations. The way I judge if turkey is done is the ready pop up turkey comes with and also if the leg comes off the bird without trouble pulling. It is a very good value. ### ⭐⭐⭐⭐ Quick reading and pretty accurate *by V***R on August 31, 2016* For those that see the word OVEN and think you can _leave this in the food IN an oven_, you are mistaken! The lens is polycarbonate, not pyrex so it WILL melt. This is not that kind of probe. Open the door, insert, wait 20 or so seconds to see if the meat is at the right temp, then remove. If you need an oven proof probe, look for and Oven Proof Thermometer or similar. Insta-Read also seems to vex users, this is a bimetallic thermometer, it is quick, but it is not instant, NO bimetallic is instant. It is however far far FAR faster than a traditional alcohol or mercury capillary tube thermometer! If you really, genuinely need 'Instant', get a digital probe, and then keep button cell batteries on hand for when you discover the batteries have gone dead on Thanksgiving day. Anyway, this probe works pretty well. It is stoutly made, but not in China, instead, it's Vietnam. The dial is easy to read meaning I don't have to find my glasses to see what it's reading. The crystal/lens is polycarbonate so it's shatter resistant if you drop it on a hard floor. It comes from the factory reasonably well calibrated, mine was one degree cool. Calibration is very simple and the plastic protector sheath has the hex drive to adjust it.
