....Waitaminute!!! Is this purchase for one tyre or two? The photos show two but nowhere does it say specifically whether its a purchase of one or two

This listing is for a pair of tyres. The the "About" section you can find the information that the package consists of 2x 26x1,95 bike tyres.

Can I use them on a 26x2.0 wheel?

I'm not sure. I had to return them. I had some 26 x 2.1 explorer puncture proof tyres that there were supposed to replace but I could fix them to the rim of the wheel.
