Very good knives with a reasonable price
I am a semi professional chef. I have knives from several brands from a range of inexpensive to very expensive ones. I currently have 4 Paudin knives (8" chef, boning, 5" utility, 3" paring). They are all are very good, exceptinally sharp, well balanced and have comfortable handles. I recommend all of them to to household users and more serious cooks. Not a fault of this knife specifically but, because they are not full bolstered knives, if you are distracted and tired when using these knives, your hand slowly slips towards the blade and you can hurt your index finger if you are not careful enough. I have the same issue with my all half bolstered knives. Even though we didn't have a good relationship with customers services due to a delivery error, Bonnie fixed problems and she even offered me some refund to fix my problem. Thank you Bonnie.

Love this knife!
Love this knife it’s sharp and a nice weight when holding and makes cutting through different meats easy, if you like your kitchen knives then this is definitely worth adding to your collection.

filleting knife
Rated down a star as it arrived so blunt that it could not cut a rasher of bacon in two. Ive since spent a while using a whetstone starting at 300 as it was so dull edged and finished with working my way up to a 3000 finish and a leather strop to polish. Now it can shave my arm - I am not sure long it will hold an edge so I might return with an update if I remember.

Stylish and very sharp
I really love this knife! I bought it mainly for removing the bones from chicken thighs. I was buying so many fillets and figured I could save money and do it myself. This knife is the perfect tool for the job and it makes it so easy. The knife has paid for itself many times over. I use it for other home butchery as well and there has never been a bit of meat it couldn't make short work of. It does require quite a bit of sharpening to keep it at its best but look after the knife and it will look after you.

More of a boning knife than a filletting knife
It's quite a bit stiff, which is just what you need when you're taking out the bones but it's not greatly flexible. It's still a great looking and functioning knife, though.
