A Homage to the painstaking, established technique that originated in the royal kitchens of Malabar in coastal Kerala. Several wafer-thin layers of dough are rolled, flattened and folded over and over once more before they are cooked with ghee or oil on a hot tawa. Greatest served with Kerala style stews or avial, these parathas are amazingly good with North Indian curries.
