I have a lot of high-end knives but have tried a few of these Paudin knives when I'm worried about damaging a delicate, razor sharp Japanese blade on something (or when my wife wants to use it. She likes to cut the item along with carving the cutting board, lol!). These knives are less expensive but I've really appreciated the quality. They have great fit, feel, and balance. The cutting edge is nice and sharp out of the box and holds up well. Comfortable to hold and easy to clean. Sometimes get left on the drying board after washing to drip-dry, absolutely no issues with staining or corrosion. Very happy with to function and appearance, would not hesitate to order other knives from this company.

Very good knife! Came very sharp and cuts veges extremely well! Know one should be without a good few knives in kitchen and if you cook a lot, this one is a must have. The Demascas steel is the key!

I found this to be the sharpest knife I have ever tried. I am a home cook looking to improve, so I am aiming to get better tools for my kitchen. I wanted a better all purpose knife for slicing and chopping. It Slices tomatoes very well, and can dice Celery, carrots with no problem. However this knife is quite large and very heavy for every day use in my opinion. After handling this knife it seemed to be better suited for use as a cleaver for cutting through Chicken Bones, or Chopping Pork or Brisket after Smoking. More of a specialty knife, unless you can handle the size and weight, then buy it, and you wont be disapointed.

Excellent quality nice weight to the knife

I ordered this as a gift. It came in a timely manner and was boxed nicely. The blade feels sharp and the knife feels balanced and of good weight. Since it is a gift I can’t try it out but I really really want to.
