I've had a dispute with the seller.When the mother came, I followed directions. Took a pint of white wine, added water to bring to ca 5% alcohol, inserted mother. A honeycomb-like substance dove to the bottom of the container and has stayed there. In 2 months there has been no evidence of acetification.My reading research tells me that fermentation takes place on the surface. When the mass of mother goes to the bottom it pollutes the substrate. I suggested to the seller that the mother was inert. He responded that sulfites in the wine (practically all wine has them) were responsible and spurned my suggestion that he send me another mother.I removed his mother and added from a bottle of unstrained, unpasteurised vinegar. We'll see if THAT works.

This product is great. It arrived timely and well packaged, but I was unaware that it required a prolonged temp maintenance. Since I don't have the capabilities to keep this at 80 deg for several months I couldn't use it. That is the only reason for my lowered rating. I cannot speak about the end result.

This mother is a real trucker...I've made three different types of beer vinegar(Stout, IPA, Belgian Golden) and each has been a success. The mother showed up quickly and in healthy condition. Definitely worth the money
