The USA Pan muffin pan and quarter sheet pan/rack are hefty, well made, easy to clean. They also conduct heat extremely well. My first batch of muffins rose fast, browned nicely at the base. Vegetables roasted in the sheet pan took on a nice glaze. The runoff from sticky buns buns didn’t stick to the pan; rinsed off easily with soap and running water and a quick once over with a sponge. The USA Pan line may be a bit more expensive than some other alternatives, but for the extra five or ten bucks, you get real quality, made in the USA. Like my All-Clad cookware — now 40 years old and still in daily use — this is stuff that will last a long time and be a pleasure to use every time.

I made corn muffins, so I did butter my cups for a crispier muffin. When cooled slightly, they lifted straight out, leaving no part of the muffin behind.
