Can you keep the grains in the basket all the time or do you remove them occasionally?

I have frozen the grains in the basket but the grains grow, so you actually have to remove some from the basket at times, I use that opportunity to wash the basket thoroughly with hot water. If you use soap or put it in the dishwasher, just make sure any soap is rinsed off well.

Does this include the lid?

The container itself has a lid with holes so that kefir can eat but not escape
