I was quite impressed with how deep of a blue you can achieve with this brand of butterfly pea powder, but please keep in mind that the color of the natural anthocyanin pigments present in these powdered flowers are dependent upon the pH of what you put it in (if you put it in acidic things you won't get blue, you will get magenta/pink/reds). Butterfly pea flower petals are rich in anthocyanins which besides being useful as pH sensitive pigments are also antioxidants; anthocyanins give many types of berries, red cabbage, purple carrots & potatoes, etc... their color. The fact that this powder changes color in different pHs means it's the real deal and not just synthetic blue food coloring. This powder had a slight floral scent when I first opened up the bag. The photo I attached is from using 2tbsp of this product for 1.5 cups of white long grain rice (that had some parboiled red rice mixed in - which didn't add any red pigment to the white rice). I feel the product didn't really flavor or scent the rice that noticeably after cooking, but perhaps added a very slight white/green tea flavor to the rice. After you boil the rice with 2tbsp of powder you will get some noticeable scum on top of the edges of the cooked rice which I just spooned off before plating the rest of the rice. I saw some other folks reviews complaining that the product only produced purples for them, but I am assuming they were likely trying to use it in beverages, and most beverages are rather acidic so you will end up with purple/magenta etc unless you neutralize the acid levels. I specifically choose this brand as it seemed like the product was sourced from Thailand based on the info on the page (which is what I was looking for), but there was no formal confirmation of origin on the package itself. I would order this again from this company, as it seemed high quality and well packed.

Little bit goes a loooong way. Mild tea like taste.. earthy and very mild. It was fun to make with the kids and watch it turn purple when you add lemon. The instructions wrote .5tsp for 16oz water. I think it was wayyyy too much... very deep cloudy blue super dark. We will try again with a little bit to get more of a clear brighter blue.. overall happy with the purchase

This pea powder is highly pigmented and makes beautiful drinks and desserts. I made a mermaid punch with it and everyone loved it. Very happy with the results. (Never mind that I spilled it on the carpet and had an interesting cleanup.)

It doesn’t dissolve all the way no matter how hot the water is.

The flavor is decent and I love the color. If you’re expecting loose tea leaves, you’ll be disappointed. You will need, or rather I suggest you have tea bags to put the tea in.
