**Q: Is it compulsory to use sugar while fermenting? Can we yse plain water instead?**
A: Dear Reader,  We learn more about fermenting through our own experiences however I've learned that water kefir can be fermented with other sweeteners such as honey, agave syrup, and maple syrup, but I've tried it with Stevia and it did not work.  An excellent reference book you may wish to invest in is Sandor Katz's The Art of Fermentation.

The first problem is that they were not delivered in the right temperature/cold pack. I waited 3 to 4 days to activate the grains but they did not plump up or become translucent. The consistency was like mush. On day 2 of trying to ferment my first batch as they were, nothing changed. The grains were basically dead.
