Why do the directions say to simmer this in water?  Does it work just as well if simply mixed with water?

I find it works better with HOT water. I do not simmer perse. I heat water to almost boil or slightly boiling in large microwave safe glass cup. Then pour the contents into a hot water safe glass I have a lid for...which to the bottom of the glass I have put in four teaspoons. I'd guess about 8-12 ounces of water to the 4 even measurement spoon fulls. Stir with a stainless spoon. Let sit  for a while and it thickens up nicely. Might need to stir a time or two over the day. I just drink it over the course of the day right out of the glass then. Some for breakfast, some for lunch time and dinner than finish just before bed. I found if I took 3 full teaspoons per day it was too much like a laxative. This works for me. But if you try to stir into cool or cold water it will float and be difficult to get into solution. It may eventually get there but the hot water really helps. But no you do not need to boil this in water or simmer. Just use HOT water poured over the dry powder and mix well and allow to cool a bit or to room temp. Hope that helps or gives you ideas how to use it easier.

Is this supposed to be strong smelling and tasting?  Mine is so strong, it cannot be disguised in canned salmon cat food..tastes terrible too..thanks

Susan, The two batches of Now Foods Slippery Elm that I bought through Amazon have been impossible to use because the product doesn't dissolve the way it should. I've used this brand for years, and never had a problem with it prior to these two batches. I purchased the same product from a local health food store yesterday, and the same thing happened; it will not dissolve. I wrote to Now Foods about this two weeks ago but haven't heard back, and I'm sorry to say that I don't expect to. Amazon will not refund my money for this product, so I'll never buy it from Amazon again. I told the store clerk about the problem before I bought this yesterday, and she said that the store will refund my money and will contact Now Foods about the problem. BTW, the lot numbers on all 3 packages are different, so I think the formula or processing has changed.
