A 5lb bag of flour or a 10lb bag of sugar will fit in the container. The bags are the same size, just the weight of the substance is different. I hope that helps.

Is it possible to purchase new gaskets for this 5 inch container?

I'm looking too, did you ever find one? The gasket kept slipping, like it was too big. And now it's broken. The suggested search doesn't yield an answer, btw.. but it's a reasonable idea. Still looking. Mine's about 7-8" dia.

Just bought a 16 ounce bag of coffee beans. They fit in the container. Also bought a 1 lb. 8 ounce bag of granola and it also fit.

can I ust these to store flour in the freezer?

I suppose you could although you might have a problem. Stainless steel will contract in the cold and this could affect the seal. Also, the cold could affect the rubber gasket by making it rigid and/or brittle. Not all types of rubber do that though and I don't know what type of rubber this gasket is made of.
