Those that say that you can't use this for low acid foods are wrong. This unit does not function like say an instant pot that does not vent until the unit is finished. This unit has a 10 pound weight and a 15 pound weight just like a manual canner. I constantly vents steam during the entire process to keep the correct pressure (just like a standard manual canner) Can this unit be used to can meat safely? Yes, it can, That's pretty much the only thing I can is meat and stews. I love this unit, and am thinking of buying a second one so I can do 8 quarts at a time. **Q: How many quarts can you can at one time?** A: You can do 4 wide mouth quarts at once. **Q: do you have to use wide mouth jars in this canner?** A: You can use regular mouth quart jars for pressure canning. They fit perfectly. I’ve been using them for several years. The issue is, according to the company, that never tested the device using regular mouth quart jars.
