Review: How did I live with out this? - Worring about the fact that my store bought bread had so many preservitives in it, that it stayed semi- fresh for 2 months, My husban and I decided to go the home made bread route... After careful research we choose this Zojirushi 1 lb machine. I NEVER bake bread soo I was concerned that this was gonna be a BIG ol expensive dust grabber... MUCH TO MY SURPRISE, I got the machine on Thrusday, watched the video ( fortunaly I still have a vcr, they do need to up date that) but went straight into the kitchen and MADE MY FIRST LOAF OF PERFECT BREAD ... This is such a NO BRAINER, that my husban came home and has made bread all weekend! You basically slop all your indgredients in the bakeing bowl (IMPORTANT: in the order the book say's to put them) lock the loaf pan in the machine and TA DA !!!! As little as 2 hours later you have Hot Fragrant Delicious Bread! I've already devieated from the recipies and made some artisan breads that I made up the recipies.... you can fudge on dry indgredients, except flour, ie more sugar than it calls for, more spices etc... Right now I have cranberry-raisin,nut bread raising.... I added an extra 1/2 c of nuts and cut the raisin and cranberry to 1/4 cup so I had the correct amount of dried fruit in the dough. I can't say enought about the way this machine works, it is almost totaly silent, and the bread loaf pan is soooo heavy compared to other brands I have looked at. My one and only complain, and it's really weak, is I wish this had an auto dump on it so I didn't have to wait 19 mins to put in my extras. (Really Lazy huh??) But that also might increase the size of the machine, and this is an awesome size, It fits under my cabinets on my counter top and is easy to store away when (if that time ever comes) it isn't in use. Yet the loafs that come out are Big (1 lb loafs but so much bigger than I thought would come out of a machine this small!) So if you want to just jump in and bake wonderful breads this is the product for you! Review: Zojirushi Mini (1-Pound) - My Zojirushi Mini (BB-HAC10) arrived a few days ago and I'm baking Loaf #4 as I write this. First, the delivery was prompt. I chose desertcart's free shipping but for some reason, it was sent overnight to me. That was a nice touch. This is my very first bread machine and I bought it because my husband and I (no kids) constantly have bread problems: the commercial loaves are too big for us and we end up throwing out 1/2 the loaf, OR we run out of bread mid-week when it is inconvenient to go to the store. Add to that our refusal to buy bread with preservatives and whatnot added to it. So it was inevitable that we'd buy a bread machine. Living in a condo with a small kitchen, this machine was an easy choice because of size (we hardly notice it on the counter now). The price was a bit of an issue but we justified that based on the superlative reviews this model has received. The first two loaves of bread I baked were truly delicious though a bit dense -- got the recipe off a website where the contributor owned an identical unit. But being new to bread-making, I didn't realize that there was a difference between "bread flour" and something called "whole wheat bread flour". I bought the latter... an absolutely delicious (and equally nutritious) version of regular whole wheat flour but of course requires more leavening than "bread flour". I had bought these ingredients ahead of time, having no clue what the Zo's own recipes contained, only knowing that most reviewers liked these recipes quite well. Loaf #3 was Zo's basic white bread and it turned out beautifully. In fact it rose so much that it was flat against the lid by the third rise. I had to open it and deflate it with a toothpick. Anyway, I'd like to save anyone who has ordered this Zo from the trouble of buying the wrong ingredients for the first few loaves you'd probably make if this is your first experience with a bread machine. Here's what you need for the regular cycle recipe for white bread from the Zo manual: water, bread flour, sugar, dry milk, salt, butter, active dry yeast (breadmaker yeast works too). I also bought Beth Hensberger's "The Bread Lover's Bread Machine Cookbook" after using desertcart's search-inside feature and reading a bit of it. It's very comprehensive and very educational for beginners like myself (600+ pages for $14). Though most of her recipes are for 2-lb loaves, she says you can halve the quantities for 1-lb. Some people disagree. My Loaf #4 (raisin bread) is such a conversion and I'm hoping she's right! This Zo, by the way, is not made in Japan, but is made in China. The construction is of extremely high quality and certainly has that sort of "Hello Kitty" Japanese look to it. The bread pan is very thick and solid. It fits very easily into the slot in the machine and putting it in and taking it takes hardly any effort. I cannot believe just how easy the whole bread-making process is. I know that other reviewers have been saying that, but I couldn't imagine that bread-making could ever be called easy. But this machine really does make it easy. The hardest part, I would say, is making precise measurements and learning about some of the chemistry behind bread-making. I've also never, ever baked anything that required so little clean-up. The bread pan and mixing paddle barely look like they are used after each loaf is removed. Once, there was a bit hard dough stuck in the tiny space between the paddle and the rod that holds it, and I found that the quickest way to clean it was to soak the whole thing in water for 10 minutes. I'm hesitant to soak it in soapy water because I don't want anything eating into the non-stick coating. I've also been using the soft side of a sponge, not the scrubby side (even though the scrubby side is designed for non-stick coatings). The notch made in the bread by the paddle is quite insignificant. I've eaten airy breads with much larger holes in the slices before. The beeping sound after 30 minutes for adding extra ingredients and for completion of baking is soft and I've been using my microwave's loud timer alongside the Zo to make sure I don't miss it. The operation of the Zo is VERY quiet. My husband was in the kitchen cooking dinner while the bread was baking and I had to ask him to take a look and see if the machine was actually doing anything. (It was. It was kneading). Sometimes you can hear the whirr of the paddle in another room if there isn't any other ambient noise. The unit came with a plastic measuring cup (1-cup size) and a plastic tablespoon/teaspoon measure. It also came with a VHS tape which was useless for me. A DVD would have been so much better, or even an online demo on [...]. The buttons on the Zo itself are simple and self-explanatory. For example, I realized after putting in the ingredients of my last loaf that I'd have to use a new cycle and I was able to figure out in a matter of seconds which buttons to press. The Zo has a cake-making and jam-making feature and those will be my next ventures. The size of the 1-lb loaf, by the way, is substantial for two people - enough for two meals for two people. Lastly, I did feel compelled to buy an additional 2-year warranty after reading some of the reviewers talk about units that conked out. (I bought it via desertcart from Square Trade for $22). I will follow up on this review in a few months. 10/13/2010 - Now that I've had this breadmaker for a few months, I have to say that I really love it. I use it 3-4 times a week. The process couldn't be simpler. The breads come out perfectly every time. When we have company I bake two loaves using the quick cycle. The cake function is great though the loaves are small. They're perfect for 2-3 people but not if you have company. Last week I used a 2-lb recipe for banana bread and had the Zojirushi mix it up but then I took it out and baked it in a regular size loaf pan in the oven. Turned out perfect. I've made jam twice. Both times the results were way too liquidy and uncooked and I had to transfer it to a saucepan to cook for an additional 20 mins on the stovetop. Still it saves you about an hour of stirring. 09/02/2011 - More than a year later, it's still going strong. There are two small worn out patches inside the pan that make taking the bread out slightly harder but I suppose that's to be expected when you bake 3-4 times a week.

**Q: I have problems slicing the bread, anyone have suggestions?**
A: Buy a great bread knife; it makes all the difference. I bought the Tojiro Bread Slicer 235mm F-737. It slices cleanly and easily through just about anything, warm or cold, hard crust or soft. I tried using a bread slicing guide, but just a little practice with my Tojiro knife produces as good or better results, and I never use the guide anymore.

**Q: trying to decide between the mini and the regular Zo, I'd like to use this machine to also rise dough- do you think it's big enough?**
A: It depends on the recipe.  I bought the book "bread machine magic" as it has all recipes for small medium or large and I use all the small recipes which include dough recipes.  I once tried a kolache recipe that was definitely either a 1 1/2 to 2 pound recipe on the dough cycle and it definitely had trouble kneading it and I had to transfer it in my kitchen aid mixer for the first 20 minute kneading cycle then I put it back in the zo as it does have the temp control for rising.  Then it did not have any trouble kneading the second time because the dough was pliable at that point.  You also cannot program so if you were to knead the dough then place it in the machine you have to let the machine run its course but there is a timed chart so you know about when everything happens.  Anyway, if you stick with 1 pound recipes you pretty much will be able to make any kind of dough.

**Q: Anyone have problems with over baked crust?**
A: We have only had our Mini Zo for 2 days. Baked 3 loaves yesterday.  First loaf on "basic" and "regular" settings.  Interior of loaf was very light and fluffy, but crust extremely crispy (making it very difficult to slice).  Second loaf was the cheese and onion basic with light crust, to which was added 1 1/2 Tbsp drained, chopped, pickled jalapeños..  Cheese, onions and jalapeños were thrown all over, even outside of the bread pan, crust was VERY dark, and when sliced all of the add-ins were at the bottom 1/3 of the loaf, a terrible job of mixing!  3rd loaf was Yorkshire Spice Bread from "Quick and Delicious Bread Machine Recipes" by Norman Garrett, settings were "soft" with "light crust".  Turned out quite well, except for the VERY dark crust.  I wanted to be able to, at least occasionally 'set and forget' this machine for overnight baking of basic loaves, so setting a timer to remove the loaf early is not a practical solution for me.  I am amazed at all the wonderful reviews for this machine (I absolutely did my research) when it cannot seem to produce a loaf with a decent crust, and am so disappointed in it that I hope Amazon will accept its return.

**Q: does this leave a hole in the bottom of the loaf, or does the blade retract befor baking?**
A: If you use the machine for baking, then yes, it does leave a hole in the bread.  As this machine bakes a small loaf of bread and if baked in the machine, it has a hole in the bottom and is shaped similar to a chimney, I prefer to let the machine do everything other than bake the bread.  After it is done mixing the ingredients, I take the dough out, shape it and bake it myself in the oven, just because of the aesthetics.  The taste is wonderful no matter which way you decide to do it.

### ⭐⭐⭐⭐⭐ I am very pleased with this breadmaker. It is a good combination of size and function, and the quality is outstanding.

I purchased this breadmaker a little over 2 years ago, and it has had heavy use since. I probably bake about about 3-4 loaves with it per week. This kind of fresh baked bread doesn't keep long, so I find the 1 lb size works well for our family of 4 (two adults and two preschool age children). I can get about 8 slices out of a loaf if I cut straight, which makes 4 good size sandwiches. The bread it produces is very consistent and comes out just right. The occasional dud that comes out has always been attributable to user error or old flour. The couple time I forgot yeast didn't quite work out. The recipes in the book are great, and the Zojirushi website has quite a few more. My kids love the Anpans(red bean paste buns) I make from the website. Here's a quick list of the pros and cons. It probably deserves 4.5 stars because as much as I like this machine, it does have some small drawbacks. Pros: Excellent Quality Consistent results Great Tasting Bread It takes up very little counter space. Very easy to use. Cons: I have yet to produce a cake that I was very happy with. I don't use the cake feature much because of this. The various bread types are all preset. You cannot customize bake time, rise time, etc. This is not really a problem for me because I find the presets to work quite well. If you want more adjustments, you might consider another machine. You have to manually add extra ingredients such as nuts, raisins, etc. This must be done about 30 minutes after starting a cycle, so you end up having to wait around if you are making those kinds of bread. It is worth mentioning that after 2 years of heavy use, the coating on the kneading blade is coming off. I might order a new one soon for about $8. A new pan is about $40, but I feel the one I have is still fine, although with some minor wearing of the non stick coating in places. Overall I would recommend this to anyone looking for easy, delicious bread from a dependable machine. The price is a bit high, but you get what you pay for, the quality is great. It's my most expensive small kitchen appliance, but I use it so much I find it very worthwhile. If you have questions, post them and I'll try to reply.
