The perfect knife for slicing vegetables. The blade is just the right shape, regardless of your cutting technique, it slides through the vegetable with ease and vegetables like okra are easily removed from the blade with a shake, instead of having to scrape them off, as you would with other blade types. Of course, the brand speaks for itself, this is the brand I have gone for throughout my forty plus years as a chef.

Got a few pro kitchen knives including some other sabatier.This one looks and feels top notch, good steel that holds its edge well, its a slightly thicker blade though, and notice it clings to onion and potato etc when cutting into them

Very sharp knife and has a good weight to it. Cuts everything with ease, onions,beef,chicken, peppers. Time will tell how sharp it will stay and how often it will need sharpened. Happy with knife so far.
