Label doesn't specifically say "all purpose" and does not mention being able to dilute and use for skim coats. can this be used for skimcoating?

Skim coat is only thing I’d use this for. It’s VERY wet and will have puddles when you open top. It’s good for novice who like to over work mud cause it takes forever to dry. 24 hours on a muggy day I like premix box light weight myself

Can we use this to fill in voids left from paint that peeled off? Some of the areas are quite large but not deep (1/8" max).

Yes but if the hole is to large you must use screen then mud over top

Should you sand this down after using it on drywall? I’m seeing a lot of uneven surface while it’s drying.

You can sand it down but it will make your house duuuusss-tyyyyy. If you use a damp sponge to smooth the surface instead, you will have better results. If you need to apply a new layer of the drywall mud after that, you will be able to see the areas you need more of the product. Another hint: place a light close to the wall you are working (and don’t rely on the ceiling light) because the shadows on the wall make it easier for you to see imperfections. Good luck!

This says on the jar don’t use for skim coat. Has anyone had success with this?

Yes i used the joint compound for skim coat with no issues, just add a little water to compound.
