I'm looking for both, flat and curved tools sharping stone.** A: Yes, chisel, knifes and anything you can move across the stones. **Q: Can the stones be kept in water ready for use of do they need to dry out?** A: Not sure if your constant exposure approach would be destructive, but they seem to be solid as apprised an extruded slurry. What I'm doing is soak both for 15-30 minute and leave 1000 grit stone in while working with the 400 grit. Then swapping out the stones in the bath bucket to work with the 1000 grid. If you can sharpen them on regular stones I would think these would work.
