Can I use acrylic paint on it?

Yes - are you painting it on a level surface where the paint won't bleed on to another area where you don't want it? Also, the banding is curled, so you will have to use a strip longer than you need so you can tie it down to keep it from curing up / moving. The surface of the banding is kind of glossy and ribbed; I would consider using some gesso with paint for better absorption. Try it out first - I don't know the exact ratios needed to get the color or texture you want.

Will it hold up in a bathroom wtih humidity?

Generally, you don’t have bare wood in a bathroom. As long as you properly seal or paint, you should not have any problems. Im a yacht carpenter and I use this product on boats. Even on exterior cabinets that see the sun, salt, rain, etc. As long as it’s sealed I’ve never had a problem.
