Will these fit in the resealable ceramic type top bottles - id is 5/8" (same size grolsch bottle id)? and how many for 16oz bottle?

I use all types of 12 oz beer bottles and long neck bottles. They drop right in. I'm sure they will work fine.

Do these work for carbonating water?

They do not contain yeast, and so would not carbonate anything by themselves. Most water is carbonated by Co2 injection.
