De Cecco gently grinds the heart of each grain, mixes it with cold spring water, then kneads the dough slowly. This results in pasta with the exceptional De Cecco Aroma, flavor, and consistency. Pasta easily cooks to perfection, has a great firm texture, and a delicious “fresh” pasta taste. It has a rougher surface, which helps the sauce stick to it. Since 1886 we have liked our pasta to be bronze drawn and slowly dried because we like it to fall into the plate full of taste, rough and always "al dente". Even though our taste has not changed, as we feel the same love for tradition, we have continued to improve our production technologies. Review: Gourmet Quality for a great price! - I first heard of DeCecco pasta after watching a few YT videos by chefs comparing pasta products. Most reviewed products fell into one of two categories: the low priced brands found on supermarket shelves everywhere, or the gourmet brands imported from Italy and cost three to five times the price of the mass market brands. And then there's DeCecco pasta. Every chef gave it high marks. I thought I'd give it a try. For about a dollar more than a similar Barilla pasta, the difference is immediately noticeable. Better taste. Better texture. It's the ingredients, and it's the process. Pure duram wheat semolina that's slow-dried at low temperature by the company whose founder, Filippo De Cecco, invented the process in Italy generations ago. The same slow drying process used by those pastas imported from Italy costing seven to ten dollars per box. For about a buck more than the supermarket brands, you're getting gourmet quality.
