Uses less sugar to make jam
Best pectin I’ve used. We use less sugar in our jams and this works perfectly. I can also use honey instead of sugar if I want. And the price is right

Wonderfully versatile Pection
I have been making jellies and jams for over 40 years and always used to use the standard store bought pectins. I never cared for using so much sugar to make the jam set. And of recent years I no longer was able to make choke cherry or wild plum jellies/jams.. they just never set up at all. All I would end up with was overly sweet syrup if I was lucky. I foulnd Pomona's Universal Pectin in a store somewhere some time ago.. and having once tried it, I have never used other commercial pectins again. Since it doesn't require sugar to make the jelly set but calcium.. it gives me such a wide range of choices when making jams.jellies. I have esily been able to make rhubarb, choke cherry and wild plum jellies that set up within days to a good consistency. I can control both the sweetness by varying the amount of sugar and the consistency of the set by varying the amount of the pectin ingredients as well. The jellies and jams have a bright sort of flavor with the fruit flavor shining through instead of just tasting sugar with fruit overtones. It is so nice to experiment with different fruit blends and sugar amounts and know that whatever I chose to do it will set up as it should. I originally bought this product in the single small box.. but after finding this in bulk.. will buy it that way since it is so much cheaper. If you enjoy making your own jellies.jams..give this product a try and have fun experiment using all sorts of juices. UI found I had some pie cherry jice canned.. and it made a wonderful jelly on the first try. The original small box instructions tell how to formulate your own recipes.. but didn't notice these same instruction with the bulk instructions.

This stuff is MAGIC!!
I bought a case of peppers knowing that I had boxed pectin at home. Got home and all of my boxes were expired and didn't have any bulk either. Mind you, I have been canning my entire life and over the past few years have had some difficulty getting my pepper jelly to jell so I wasn't going to take any chances on expired pectin. Ordered Pomona pectin on Amazon and anxiously waited. I used this for double batches of pepper jelly and I can tell you that this stuff is MAGIC! I wish that I had discovered it sooner! I made 3 double batches and every single one jelled with ease. I am hooked and will not go back to that boxed stuff ever again, especially given the fact that this does not expire!

My favorite pectin!
Pomona's Universal Pectin is my go to pectin every time for making low sugar and sugar free jams, jellies, and syrups. I get the perfect set, unlike other "lower sugar" pectins, and I appreciate how the fruit flavors shine, instead of the sugar. They taste so good, no one I've gifted my jams and jellies to have noticed they are lower in sugar. I just get rave reviews and requests for more. Pomona's is a joy to use, comes with very clear instructions, and they even tell you where you can add your own creativity. No other pectin allows you to fix a jam after it is canned. Pomona's website (pomonapectin.com) has lots of recipes, answers to FAQ, and they even have a Jam Line you can call, where an actual person answers your questions or helps you to adapt recipes for use with Pomona's. They helped me to adapt a long time family favorite Strawberry Rhubarb Freezer Jam into a low sugar jam I could can. It passed everyone's taste test as if I hadn't changed a thing. If you're looking to make lower sugar jams, jellies, and syrups than typical pectins require, definitely give Pomona's Universal Pectin a try. You won't be sorry! And when you too become a fan, this larger quantity is perfect since there is no expiration date if stored properly. I love having enough in stock to last me a few years without worrying about who is carrying it locally this year or waiting on delivery if I forgot to order more.

Uses less pectin per batch and much easier to use
I finally decided to spend the money for this pectin. I thought it was expensive but actually it's not. Previously I was using Ball low sugar pectin and was not having great results. Frustrated, I "splurged" on this. This brand uses about 1/3 the amount of pectin for a nearly equal sized batch. I was using 7 1/2 tablespoons of the Ball for a 10-jar batch. I used 7 1/2 teaspoons (for 1.5 the standard recipe) and got 9 1/2 jars. If this was the same size package as the Ball pectin it would make 3x the amount of jam. I find that to be a bargain. So you may have to shell out more money for the package but it makes a lot more batches of jam. It's actually not expensive. Now let me talk about my experience using this pectin. This is so easy! I would have to boil the jam for several minutes with the Ball pectin to get a light jell, even though the instructions said to hard boil for one minute. I couldn't get a jell with one minute of boiling. But with this pectin, it actually does jell after one minute. I was done so much faster and was much less miserable because I didn't have to stand there with the jam boiling all over me for several minutes. I'm a convert! I won't buy another brand ever again!

Pectin for jelly/ jam making
Used 1st time to make orange marmalade and it turned out perfect! Then I did apple scap the pineapple marmalade. Worked out great!
