Review: Extraordinary Value and a Fascinating Alternative to Paper - I have been using these filters for less than a month, and I am finding them extraordinary. At first I experimented with air-drying the filter after each use, but I have since switched to the traditional Japanese-style storage method of keeping the cloth submerged in water in the refrigerator and refreshing the water every day. That has worked very well for me. Cloth definitely creates a unique brew compared with paper. I find that it can produce noticeably more complexity, body, and flavor integration while still preserving the distinctive notes of a good specialty coffee. There is a bit of a learning curve, however. Grind size and water temperature often need to be adjusted slightly compared with paper filters. As I write this, I am drinking an Ethiopian specialty coffee brewed at about 92°C using a Timemore Chestnut C3S at 17 clicks. I am getting all of the expected flavor notes, and the cup is extraordinary. I am still comparing cloth with paper, and that has been part of the fun. Neither is necessarily better in every situation; they simply present the coffee differently. Although this filter is designed for the Hario V60 02, I have even experimented with it in my stainless Kalita Wave 185. It is obviously not a perfect fit, and I would eventually like to get a cloth filter specifically designed for the Kalita, but the Kalita is forgiving enough that I have still gotten some very good results. For the price, I think this is one of the best values available for someone interested in trying cloth brewing. I have not tried the competing reusable cloth filters, so I cannot make a direct comparison, but this has been an excellent, low-risk introduction to cloth-filter coffee. Highly recommended for anyone who enjoys experimenting with pour-over coffee and wants to explore how cloth changes clarity, body, aroma, and flavor complexity.
