It's neither necessary nor better. **Q: If you take all the trays out is it a flat surface you could place jars on to make yogurt?** A: I found an inexpensive way to make yoghurt. It helps if you can heat the milk to 185 deg F and cool before you place the bacteria in it so you get a denser yoghurt. My yoghurt is more like cream cheese. **Q: Does the food stick to it? Easy to hand wash?** A: Haven't had any problems with food sticking. I've done carrots, mushrooms, peppers (sweet & hot), sweet potatoes, venison jerky, & apples. Grid sheets are easy to hand clean & have put them in dishwasher (no hot, sanitizing washes or rinses) on either top or bottom rack.
