Do it!
I was skeptical, but no need...the yeast is viable! I got a good proof on test batch with sturdy foam so it is fresh. The package was sealed and hard as a brick, as it should be. The cost for a pound was less than a 4 ounce jar. If you store your yeast air tight in your freezer, it can last for a couple years. I refilled my (over priced) old jar and divided the rest up between 3 zip lock bags. I then put the three sealed bags in a vac'n seal bag large enough so i can reseal it, marked the date and contents and stored it nice and flat in my freezer. I keep the working jar of yeast in the freezer and quickly remove it to measure out for my dough and put back immediately. Working jar is never out of the freezer for more than 30 seconds at a time😃.

Great yeast. Very consistent
It’s my favorite and only yeast for breads. I can only get it on Amazon. Not in my area. I get consistent rising on all my breads with this yeast.

Good product
Like this product, have used for years. Great price, stays potent for years in the fridge. Excellent for rye and quinoa etc combinations with white or whole wheat flour. Yeast bubbles quickly, haven't had any problems with this.

Good Buy
I always buy this yeast from amazon. Cheaper than in grocery store and works. Expiration is always good on this product.

Excellent Rising
SAF Instant Yeast is a fantastic product that offers great value for its price. This yeast has excellent rising capability, allowing you to achieve perfectly fluffy and light breads and baked goods every time. One of the best features of this yeast is that you do not need to hydrate it in liquid first – you can simply mix it directly with your dry ingredients. This makes the baking process much more convenient and efficient. Overall, SAF Instant Yeast is a reliable and easy-to-use option for all your baking needs.

Sad-instant Yeast
Received my instant yeast today and made my first loaves with it. Rise is great, bread is yummy. Disappointed in expiration date 08/25. Not the 2 year expiration or near that as expected. I’m sure I’ll use it up before that. That’s not the point though.

It's our go-to for baking, never disappoints.
Started using this at the start of the pandemic when we got into baking, and have become total converts. We do enough baking that buying bulk packages of yeast makes sense, and using instant yeast makes it so easy. Not that regular yeast is difficult, but putting together the yeast plus water at exactly the right temperature and waiting for it to bloom is just a few extra steps for someone who only received a "C" in chemistry in high school. Instant yeast -- measure it and dump it in, and you're done. And SAF instant has given us reliable and consistent results for all of the breads and rolls we've used it with. Why mess with success?

A two year supply for the cost of two - three packs at the supermarket
It's bread yeast and it works. Maybe there are folks who can taste the difference between this and similar brands, but that seems to be beyond me. For the last 5-10 years I've been buying a package of yeast like this and dumping it into a clean / dry mason jar. I put keep it in the garage fridge and I've always got yeast on hand if I decide to bake bread. In my case, it is more than I use in two years, and that's about what the effective life is before it starts dropping off in it's ability to activate and rise. I've used this batch for dinner rolls, french bread, focaccia, pizza dough, pretzels, and bagels. It worked well for all of them.
