Do these work with low top sneakers?

It all depends on the back of the shoe. My husband wears this with every shoe due to a shortage on his left side due to a hip surgery. They work perfectly fine in high or low top . Just make sure the back part of the shoe is a little higher so that depending on your height, ur heel is not slipping out.

Are these adjustable so that you can decrease the height as your ankle stretches out?

The main insoles and the bottom piece which can be removed for lower height. It is adjustable for height increase or decrease only.
