Try to keep it a couple inches away from the meat, which is going to be cold and will fool it. Use that probe to monitor the temperature inside the smoker. Use the bottom and side vents of the smoker to adjust the heat up or down. Leave the top vents open. **Q: what is the length of the probe?** A: The probe is 8.5" with a cable length of 40" (3' 4") 2 probes with cables included **Q: The length of the probe is given as 8.5" but iTronics answer says 6.5". I need 6.5" straight, not bent, probe. The probes on this one seem off by a few degrees when I have them in the meat. I checked them in boiling water first and they were fine. The other thing is it doesn't like aftermarket probes. The old one would use my other probes without any problems now I get a HHH reading if I use them. I don't trust it entirely, but it will give you a ballpark reading while monitoring your cook. I use my pen Thermometer as a backup.
