This is my first batch and first try of baking caneles and it turned out greater than I expected! I followed the Japanese chefs recipes and got some tricks to share. I did the traditional way as in resting the batter for 24 hours and let the batter cool down to 59F before pouring in the mould to prevent bursting. You don't need beeswax. I used ghee to grease the mould by brushing it lightly and followed by a little bit of honey around the rim. Honey will prevent it from overflowing and make it stay in shape. For this batch I did 15 mins on 425F (crusting) then 50 mins on 375F and I feel like it could be a little darker. As the mould is thick, if you like darker caramelized color, I suggest to increase the bake times to 20-25 mins on 425F and 55-60 mins on 375F. Removing them is super easy, I asked my husband to flip it and as soon as it hit the angle ot slid off the mould right away. Cleaning is also super easy as it's non stick. I'm very happy with this mould and couldn't recommend it enough!!!

Charging a premium price for items described as made in italy. The box clearly states they are made in CHINA and tinned in Italy. Its not worth $117 if its made in china when the french made ones are the same price!!!! Don't cheat your customers. Just give an accurate description. The same quality, accurately described as made in china, sell on amazon for $20.

Beautifully made product. I have yet to use the tin so unable to comment on the effectiveness of the non-stick surface. Looking forward to baking with it.
