Q: In the ingredients, cinnamon cassium is not even listed. Are those simply the inactive ingredients?

No. Mostly there are 2 types of cinnamon in the capsule form- Ceylon and Cassia, I believe the name is based on taste and possibly where it is from. NOW FOODS used to use Ceylon but switched to the less expensive Cassia without notifying buyers of the change. Obviously they now don't even tell the buyer which cinnamon they are buying. From everything I've read, Ceylon, true cinnamon, has a milder taste but more important is not harmful to the liver in larger quantities and is more effective. To assist in controlling my blood sugar I take 8+ Ceylon cinnamon caps daily along with Fenugreek & Bitter Melon. And have since switched from NOW to GreenPacks for my Ceylon cinnamon. Do a internet search to compare the 2 types and decide which is best for you.

I can't answer where it was grown but I believe it is packaged primarily in Walla Walla, WA.

Cinnamon I have does not contain gluten. Actually, there is no need for gluten in cinnamon since gluten is a carbohydrate usually derived from wheat. It is an elastomer used to make bread rise.
