Is it flexible enough to work in round bowls being the inside is steel ?

Not for bowl scrapping. Best for flat surfaces. I use it for an art tool in spreading cold wax & oil on flat boards. There is some flexibility up to and a half inch.

Is this product heat resistant, like a silicone spatula? I was considering using these with a crepe griddle.

Yes, I use it just like a silicone spatula to scrap hot pots!
