Easy Red Velvet Cupcake Recipe - Total Time: 38 min. Servings: 12
Ingredients: 1 box (about 18 oz.) yellow cake mix 1/2 cup unsweetened cocoa powder 3 large eggs 1/2 cup (1 stick) butter, melted 1 tbsp. Hartley’s Red Food Coloring 1 package (8 oz.) cream cheese, softened 1/2 cup (1 stick) butter 1 box (16 oz.) confectioners sugar (about 3-1/2 cups) 1 tsp. Hartley’s Imitation Vanilla Flavor Water as specified on cake mix box Instructions:
1. Preheat oven to 350°. Line 24-cup muffin pan with paper cupcake liners; set aside.
2. Beat cake mix, water, cocoa powder, eggs, melted butter and Hartley’s Red Food Coloring in large bowl with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Spoon batter into prepared pan.
3. Bake 18 minutes or until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Remove cupcakes from pan and cool completely before frosting. LIGHT OR DARK CORN SYRUP Perfect for baking, candy making or other cooking application. Packed: 4-1 Gallons
4. Beat cream cheese, butter and Hartley’s Imitation Vanilla Flavor in large bowl with electric mixer until smooth. Beat in confectioners sugar on low speed until blended. Beat on high speed until light and fluffy, about 1 minute.
