How do you change the volume? I can't do it from the connected device

1.Menu Setup: Short Press the dial to enter OSD menu, roll the dial upwards/downwards, you can switch between menu options; press the dial again, you can confirm the secondary menu options you want; press the dial for the third time, you can adjust the values of the secondary menu. Or you can short press the ON/OFF button to exit the option you choose. 2.Brightness Adjustment: When NOT in the menu surface, roll the dial upwards once to access brightness , continue to roll upwards/downwards, you can adjust the brightness level. 3.Volume Adjustment: When NOT in the menu surface, roll the dial downwards once to access volume , continue to roll upwards/downwards, you can adjust the volume level.

Does this monitor have a gravity sensor to automatically rotate from landscape to portrait mode?

No, it won't rotate automatically, you need to set it manually via the linked device

Volume and brightness seem to restore factory settings after every shutdown, what should I do?

Volume and brightness can be adjusted appropriately after powering up using the main menu button. This had to be followed by using it for a while before powering it down, and the settings will be retained the second time you use it. You can check out the video and the manual to do this.

Does it have Bluetooth?
