I only use it to test the inner temperature of the meat. You must leave it in for a minute or two to allow the dial to register fully. When the needle is static, read the dial and if it reads rare and you want it well done, put your meat back in to the oven and test again later. **Q: How long does it usually takes to reach a correct reading once you put in the meat?** A: It varies depending on the size of the piece of meat being tested, but about 3 to 5 minutes. **Q: can i use this with liquids and to make candy?** A: I can confirm that this would be ok to be dipped in liquids, however is not accurate enough for candy making. **Q: the pack states "not to be left in the oven while cooking" Has anyone done this and damaged it?** A: last christmas i left mine in the oven all the time it was cooking and looked to see the indicator move to the correct cook.
