SHARP
Wow. Fed up with having blunt knives and decided to spend more on a hopefully decent one. Not disappointed, it is SHARP, can cut thin slices of tomatoes and lemon. Really nice feel and weight. Going to buy a smaller one from the same range. Why have I waited so long!?

Handy 6” Chef’s knife, well balanced, good edge.
The Mercer 6” Chef’s knife has a good edge, cuts well without bias, and feels balanced and comfortable in the hand. The absence of rivets in the handle is a great plus point for me. Hand wash it only, never ever in a dishwasher. The steel is good quality and if the claimed alloy has been used then it will keep its edge much longer than a more old fashioned blade. Always use a proper whetstone or sharpening steel to dress the blade. Out of the box it cut though a tomato under its own weight, one of the ultimate tests for how sharp a blade is. Trimming a steak was easy, fat and gristle were banished in a twinkling. I like this one.

First impressions very favourable
I received of of these via Resale. The edge had been badly damaged so I didn't keep it but it gave me the chance to view a very nice knife, solid, good looking and I should think very effective. The handle would suit larger hands. I am considering buying a pristine one at full price.

Blade is excellent - only minor gripe
Sharpness and quality of blade edge is excellent. Stays razor sharp with minor sharpening once a week (couple of strokes with a steel). As a knife can't really fault it. My only gripe is that the handle does feel disproportionately cheap compared to the blade. It would have been cool if they had used a slightly more premium plastic.

Mercier 6 inch chefs knife
Fantastic quality at a great price! Heavy, super sharp, grippy handle. Comfortable to hold with rounded areas where the handle meets the blade. Great size for smaller hands and isn’t unwieldy, highly recommend!

Good quality knife
This is my first proper chef knife. I didn't want to spend too much money on a proper knife but still have the quality and this knife didn't disappointed me. After 2 months of use is still holds the sharpness just every now and then use a honing steel and that's it. I don't like big knifes that's why I choose this size and it sits perfectly in my hand. Very comfortable grip and has a good balance.
