It was all pure wild honey. avoid pasteurized honey, it may not work as well. That is according to one of the mead books I was reading before I made it. I just bottled it and it tastes fine. The yeast will produce a semi dry, Low carbonated mead. I would recommend wildflower honey, orange blossom, or blueberry honey. **Q: How long does the mead take to ferment before you can drink it?** A: The mead will ferment for about 4 weeks. After that it will be considered a young mead in taste. You can drink it but the complexity of it will better with age.
