Can this be used to make blueberry jam

I use as a sweetener- never made jam with it. I imagine you could thicken with cornstarch and store in frig.

Does xylitol have an after taste like other sugar substitutes?

No, I'm not aware of any aftertaste. I don't use it in food. I brush my teeth with it which keeps my teeth feeling like they were just cleaned at the dentist. I also melt about 1/3 tsp in my mouth before bed that keeps bacteria, cavities and tartar from developing. For a good sweetener without aftertaste, I use stevia glycerite. It has the texture of a lightweight syrup, quite sweet, without aftertaste.
