My favourite
I’ve been meaning to write a review as I bought this knife on Amazon 8 years ago. It was about £70 then! I thought that was expensive. Anyway, I’ve used it for everything, daily. I use it instead of the heavier knives for meat, I use it instead of the smaller knives for veg. I use it to cut the crusts off my children’s sandwiches. It is of course excellent for butchering a chicken, but I’ve found it’s sharpness, accuracy and lightness mean it’s the only knife I reach for most of the time. It arrived horrendously sharp; literally a razor blade. I sharpen it often, a few strokes a few times a week, as it loses its keen edge quickly now. But it sharpens quickly too, and will then slice onions and tomatoes with satisfying clarity. Remember the Goodfellas scene with the garlic? That’s what it does!

Global GF-31 16 cm boning knife
What a superb piece of equipment. With this amazingly sharp tool I can (for instance) completely bone a chicken in just a few minutes. The rigid but fine blade with its incredibly sharp tip combined with perfect balance & weight means it gets right in there to do the business. I ordered a Global Santoku knife a while back from a recommend in a knife forum. Turns out it was a great knife, and it quickly became my wife’s favorite kitchen knife - we had Zwilling/Henkels for the most part before I got these. They’re light weight, keep the edge for a reasonable amount of time (they all get dull, these commercials for the “world’s sharpest knife!” are silly, whack stuff up on a cutting board, go through some turkeys and roasts and it’s as dull as the $4 knife at the dollar store). They’re kitchen knives, so rust really isn’t an issue. They’re also lightweight (I believe on the bigger knives, the handle has a hollow cavity) – it’s all one-piece construction, so no handles coming off or getting damaged or destroyed by washing or leaving it too close to a burner. For Christmas I decided to replace all of our Zwilling/Henkel knives with Global knives. I ordered them à la carte – like everybody else, Global’s big sets had more than I needed and not enough of what I wanted, so if you see this review in multiple places, that the reason. Anyway, the 6.25” boning knife is very nice, functional and worth the money.
