The essential Potato
Potato starch ia a very useful product, it replaces cornstarch especially in Chinese cooking and usefull for breading fried foods

Works well in 'alternative' flour (what flour free baking)
I actually have not used this yet - I purchased it to make the basic 'flour' described in the book Gluten Free Baking (which I also recently purchased for my Kindle). The potato starch is used in the 'alternate baking flour' the author has found (for her) to be the best substitute for wheat flour. Most other products in the 'alternative' "flour" are easily available but I have had problems finding potato starch. I have made several recipes from the book and they are delightful bread/biscuit/rolls recipes. So if one is using alternative means to bake (and not using wheat flour) this product can come in very handy.

I have celiac and require a lot of different products to replace wheat flour. This one checks all my boxes at a good price point.

Great for thickening soups.
Cost is a bit excessive for what it is, hence the 4 stars. Otherwise it is a great alternative to a roux, etc. for thickening soups. I try to be mindful of those with Gluten issues. Very creamy results, no taste issues at all. Just be sure to mix it well with cold liquid before adding. Also, add it at the end of cooking, at a Simmer and cook a few minutes, remove from heat.

The gf bread comes out Perfect.
They definitely earned a long-term customer. I used to buy smaller size packets from Sprouts and felt that I was being ripped off. The bread was a bit crumbly too. Then I decided to buy bulk and settled on this product because the packaging seemed simple and convenient with the resealable bag. My gluten-free bread came out so well. The bag sits in our pantry closet. Very happy with my purchase. Will surely buy again.

Resistant Starch daily...
As part of my gut health efforts I've been taking 2Tbsp of this product each morning with some liquid probiotic mixed in cold water since September 2018. This on top of a ketogenic diet [with great success since May 2018], has made for a subjectively better digestive experience overall compared to what we could call "the typical American diet." I have not used the product for cooking, only for this exercise, but I am quite pleased with quality, price, etc.
