What's the shelf life (unopened in-cabinet or open in the refrigerator) on this product? CAN they be frozen?

I buy these a lot in beef and turkey varieties.  I'm not a particular stickler for expiration dates, my husband less so.
When I first started buying them, I noticed that unopened the pack will last for about 6-8 weeks.
Opened, they begin spoiling fast and only lasted me about 2 weeks before they were growing white spots (yuck!).
I started refrigerating them because we weren't going through a whole bag very quickly.  An opened package lasted about 6-8 weeks in the fridge before the white spots started growing again.
My advice if you are refrigerating them:
Dont' try and eat them cold from the fridge!  The oils aren't warm enough to hold the meat together so they crumble and the taste is really bland/awful.  Let them warm up to room temperature or (dare I say) microwave them to take the chill off without cooking them and they'll taste fine.
I ALSO tested out freezing part of an opened bag but forgot they were in there for about 3-4 months (pretty good test though).  I thawed them in the fridge and they were fine but time catches up to them quickly even refrigerated.  They only lasted a couple weeks before the white spots started growing.

How many are actually in a package?

Well it says about 12 sticks come in there but both of the packs that I bought had 11 in them each, which is just what the package says "about 12".  I was about to complain and say they only gave me 11, and then I looked again and seen that I was assuming they would have 12 in there but then I realized that they told the truth, anyway, they were good.

What is the collagen casing source?

In the description is just says collagen casing...when it came in it said Beef Collagen Casing. Very disappointed since they were for my son who is allergic to beef.

Says to do fridge after opening. I do.Throw it in with some drinks when I go golfing...all good...don't know about long unrefrigerated storage.
