The perfect rice to use for Brown Rice Sushi.Instructions: Boil - From Ambient - Combine 1 cup Nishiki Brown Rice and 1-1/2 to 2 cups water in a medium saucepan. By preference, add salt, butter, cheese or other flavoring. Bring to a soft boil, then reduce heat to low. Cover and cook for 50 minutes, or until liquid is absorbed. Let stand covered for 10 minutes before serving. Fluff with fork and serve. Makes 3 cups cooked rice, or 4 (3/4 cup) servings. Note: If using electric rice cooker, combine 1 cup brown rice and 1-1/2 to 2 cups water in electric rice cooker pot. Continue as directed by rice cooker manufacturer. When cooking is complete, allow rice to stand covered 10 minutes before serving. Makes 3 cup cooked rice

**Q: Why does the brown version cost almost twice as much as the white?  White rice is brown rice that has been processed so white should cost more.**
A: Brown rice is apparently healthier than white rice. And for some reason I've found that anything that's healthy and good for you are not wallet friendly. 

**Q: What about the high arsenic levels found in U.S. rice? What is it in this Nishiki Premium Brown Rice?**
A: Here in the USA, our ENTIRE food supply is suspect.
Why worry so much about this particular rice?

I worry about E. coli O157:H7 commonly found on fresh vegetables
and in 1/3 of all poultry, among other foods.

Arsenic levels? Been eating some sort of rice for over 62 years.
Yet, here I am...

**Q: What is the shelf life of this rice?**
A: If you have a problem with bugs in your rice, put it in the freezer for 24 hours then store in in an air tight container. Usually the problem is meal moths. I had a lot of trouble with them but I started using moth traps and got rid of some grain products that had been on the shelf too long. It took me about a year with the traps but I no longer have moths. I also freeze most of my grains and dry beans for 24 hours before putting them on the shelf.

**Q: Is it slightly stickly enough to make sushi or rice balls?**
A: No, it comes out fluffy but not sticky. Use Nishiki white rice for sushi. It is plenty sticky.

### ⭐⭐⭐⭐⭐ Excellent rice but a bit sticky

FYI: Instructions on picture here are different from my packaging. Mine says 1c rice and 1 1/2c water. Just cooked my first batch of this. What a difference from normal store bought brown rice. This rice is chewy and and has a nutty flavor which I love. Won't be going back to store bought again. Instructions say to soak rice 30 minutes and then cook 30m. I soaked a little longer and then cooked it but still had water left over. When saving in a container I noticed it's really sticky. Not sure how to fluff the rice to get them to not stick. I would love that restaurant quality style where each piece is separate. Any tips let me know. I'll keep experimenting. Edit: Double batched this time, 2c rice 3c water 1tsp salt after soaking 30m. Cooked 30m, had a lot of water left, so I let it go 20 minutes longer and it's ok. Still sticky. Will try rice cooker next.
