The “good soy sauce” to use for special occasions
It’s a really good soy sauce, tastes smooth and “real”, like it’s behaving as one substance instead of some cheap soy sauces where you can taste the different ingredients as you eat it. It’s salty of course, but it’s smooth and flavorful. I like it a lot. I’ll still keep a bottle of Kikkoman around to use for things that it doesn’t really matter, but I can’t wait to try bringing this to my favorite all you can eat sushi restaurant.

Rich flavor and very dark color. Add to sauces or sprinkle on top of your food before serving
Rich, thick soy sauce with a very dark color. The sauce is less salty than the popular brand, but still has a strong soy-sauce flavor to complement whatever you're cooking, use sparingly please or the dish will quickly turn too bitter. I used this on some pork with orange, and it came out really nice It will darken sauces if you cook with this. If you sprinkle a little bit of this on top of finished food, it stays put and looks nice on the plate.

Super Tasty!
I watched a short documentary on YouTube about the Japanese tradition of barrel aging soy sauces and hunted this product down based on that. I sure am glad I did. This particular soy sauce is barrel aged for four years and the quality shines through, especially when mixed with other ingredients. The taste is complex (super umami) and not too salty. I tried to reserve this sauce for only special occasions, but I still used it way faster than I have ever used any other soy sauce in my kitchen. Yes it's very expensive, but in my humble opinion well worth it. I tasted a few drops in a spoon when I first got it and wasn't overwhelmed. However, the first time I made a simple dipping sauce with it that included sesame oil, ginger, garlic, green onion, fish sauce, sambal, and rice vinegar I was blown away by it's elevated quality. If you're a confirmed foodie like myself, and furthermore love everything Asian cuisine related, you owe it to yourself to try this at least once. Be careful though, it's super addictive. I'll never be without a bottle of this soy sauce in my kitchen as long as they keep making it and I am able to cook. Great product!

This Soy Sauce is fantastic!
This soy sauce is Fantastic! Great flavor that is not over powering or to salty. The price is expensive but if you are looking for that special item for a unique flavor to use sparingly this is it. I purchased 2 different aged soy sauces. Both are unique in their own way. They both are costly and make great dipping sauces. I just haven't been able to decide which is better. But as the weeks go on and I make different meals and sauces with them I am sure one will move to end use and the other to in product use. If you try these you will not want the regular sauces again. Unless you don't care and just want an average meal. LOL

Excellent soy sauce
There are some reviews here that say this soy sauce’s complex flavor is too subtle for everyday use and not worth the price. For people who have reduced smell or taste post-Covid or from regular exposure to smoke, this may not seem appreciably different from cheaper soy sauces. A few notes: it’s not for just splashing on rice, though that’s fine. Where you also can use this to bring out its amazing flavor : finishing step in soups and stews, glazed/brushed as a finish over cooked meats, fish or roasted veg, glazed over pan-fried tofu, dip for sushi, as a dash in hummus. Sweetened with sugar and add a little garlic and ginger for a bbq sauce on chicken. Marinate with chicken wings with garlic overnight before cooking, though I would suggest mainly adding this as a finishing step at the end of food preparation as to not lose the flavors to evaporation.

Wowza
This is so good. I tried it with some fried eggs, little sausages, rice and green onions. Amazing. Best breakfast I've had in a good while. I wish it was a bit cheaper, but wow. You can taste the difference. It is so dark and thick compared to kikkoman and it has this amazing depth of flavor. It's ruined me. How will I ever go back to kikkoman?

tastes good, not worth it.
it tastes good, better than any other soy sauce i've had. i don't think it's worth it. if i was sipping on this like a wine, or an absolute fiend about soy sauce, this would be worth it. but i put this on other stuff. hell, just putting this on rice that wasn't 100% plain and it covered up many subtle flavors. it was not worth all the extra cost. i think i could simulate a lot of it by just mixing in some mirin or something in with cheaper soy sauces. heck, years ago i bought a huge jug of kikoman (stay with me). only the gallon one or whatever. it took me 2 years to go through it. by the time i got halfway through it, it smelled funny? the guy had fermented a little. it actually improved! so for my money, i'm just going to get a jug of kikoman, break the seal, and let it ferment in my cupboard on it's own.

I saw a YouTube video a year ago or so, that took you through the brewing process of this particular soy sauce, and I had been wanting to try it ever since. Well finances finally allowed me to order a bottle, and the day it arrived we, as a family, decided to have homemade sushi in order to taste test this soy sauce. It is by far the best tasting, smoothest and lightest soy sauce on the market. Well worth the AU$50 per bottle. Anything store bought doesn't even come close to the flavour or texture of this sauce. We now use it very, very sparingly, but I will be ordering another bottle before we get half-way done with this one.

I saw this product on a youtube channel, describing the long production and ageing process. It has a distinctive stronger taste and presence.

Saw this on a documentary and decided to give it a try, despite it being over $50 by time it arrived. And omg! Will Def NOT be sharing, it's worth every cent. Give it a try whilst there are still authentic soy sauce makers, the shop brought stuff may as well be salty water with black food dye and a bit of cornflour to thicken...
