Are these knives good for large hands?

I don’t know what you consider “large” but these aren’t small knives, except for the paring knife. I have large hands for a woman and they feel fine to me.

How long do they hold an edge after sharpening?

we touch them often with the provided stone but we also use them all the time and insist on a razors edge

How do I keep the knife handle shiny and keep them from breaking?

Always hand wash the knives, never put them in the dishwasher. I also purchased a magnetic wooden knife block so as to never put them in a drawer or even a conventional knife block, it looks great and is highly functional.
