Can I use with Chocolate (instead food color)?

Yes, but you MUST use cocoa butter/colored cocoa butter/fat based pigment dissolved in cocoa butter, and you must warm up the sprayer and bowl with coloring with a heat gun before putting in cocoa butter. This is good for adding great colors to bons bons. For colored cocoa butter, we use the Chocobutter brand. It is super high quality with beautiful pigmented colors. My husband is a professional pastry chef and does this all the time, as recent as yesterday- this gun works perfectly with no issue, you just have to take care of it really well. You should also clean it really well right away with hot water and a brush (some people add a little drop of degreaser) to make sure to get all the cocoa butter residue is cleaned out after or it will seize up the gun and you won't be able to use it. After washing the gun, dry the inside by attaching the gun back to the compressor and blow it out. Alternatively, if you want to spray mousse/entremet cakes with cocoa butter (dark chocolate mix of chocolate-half cocoa butter or white chocolate mix of white chocolate and cocoa butter) cocoa then you need a different machine- a power sprayer. We use a basic Wagner paint sprayer for this- Wagner 0417005 Control Spray HVLP Sprayer- and works perfectly.

Can it be use to decorate a ice cream cake ?

I'm not sure if the food coloring would do well...I'm afraid it would bead up due to the temperature changes
