Is this a jelly-like consistency? I want it to later in-between two cakes but don't want to buy a two pound bag. Is this similar?

I don't know what the 2-pound bag you are talking about it, but these cans of SOLO are what I use to layer between cakes and to fill cupcakes and also to fill the indentations in Kolaches. I use the apricot between layers of carrot cake and the raspberry beween layers of my pineapply-orange-yellow cakes. Lots of raves. Always. Good luck.
