Is this about the size of a 5 gal bucket? Trying to see if it will fit in my fridge

It's taller than a 5 gal. bucket, says it's 15.75 in. tall. Not sure how tall a bucket is, but I do know that the Briner is taller.

Would you use this like a crock for making saur kraut?

Yes. The Briner has been used to make sauerkraut

Do you have to use bag liners with this?

You do not its food grade. However when I brine my turkey I often use a bag simply because clean up and moving the bird around is way easier with it.

Will this be large enough to fit a whole packer brisket?

It should be. We are able to get a fairly large turkey (22lbs) into it. I imagine if your brisket is smaller than a turkey it will fit.
