Raw sauerkraut is fermented and is a good source of probiotics. However, canned foods are heated for pasteurization, which kills probiotics. Therefore, I don't consider canned sauerkraut a good probiotic source. But it is good fiber and probably good for digestion.

What's the expiration?

I could not see an expiration date anywhere. It is delicious though, we love it. By the way, it is made with mild white wine, not wine vinegar.

Is this product pasteurised

How long does last in the fridge once open?

Sauerkraut is one of those things that can stay in the fridge for months - it's not uncommon for me to have a jar of this stuff for several months in the fridge.
