There are two reasons why they should have included a sun. One, it is marketed as the “solar system.” “Solar” is the operative word here. Two, there is not “day” or “night” in the solar system and thus it matters not that they glow in the dark. They should have included a sun.

will this work as a baby mobile? I have the mobile attachment- would I be able to string these to it? Or is it strictly for the ceiling?

Definitely! As long as there are holes in the attachment you can thread the fishing string through them. The solar system comes with planets that already have loops on the top for string to be tied, and it comes with fishing string.

I read in a previous question that these need to be "snapped" together. Does that mean they come in halves? (halves are preferable for my project)

The larger ones come already in halves to save on packaging. The smaller ones are whole, but are able to be broken down into halves along the center.

How long will the planets glow?

They glow a pretty long time. We have it hanging in our bedroom and they almost keep me up because they glow so bright, haha. I'd say about 20-30 minutes until they are completely out.
