What is the difference between Classic and Gourmet knives?

The Wusthof Classic knives are the better quality of the two. They are forged from a single piece of steel. The Gourmet knives are stamped out a sheet of steel. The forged knife has a bit more weight to it and should stay sharper longer.

What is the edge angle of the blade?

I believe the answer you're looking for is: 14 degrees (for Wusthof's Chef/Western knives. 10 degrees for their Asian knives). When using honing or sharpening steels, use a 14 degree angle to restore the blade to perfect sharpness. If you use a Wusthof steel (and you should, it is made to be harder than the knife itself and all manufacturers use different hardnesses. The hardness rating on the Wusthof Classic is 58 and their steels are at 65), if you angle the blade so the top of it aligns with the outer edge of the steel handle, you'll be at right about 14 degrees. I suggest visiting the Wusthof website, and viewing the video there about honing and sharpening their knives using their steels. You'll see "Chef Mike" demonstrating that very technique. I'm answering this now, even though it's a year and a half later, because it may useful to others as well. :)
