How do you sharpen the blades?

I can see no way of sharpening the blades, and no need for light domestic uses. For professional or heavy duty use you might need a different and more robust item.

Will this chop peeled butternut squash ?

Yes - it will chop more or less anything so long as it's cut to fit into the chute. I've used for both sweet potatoes and ordinary potatoes, so squash should be no problem.

I do not know the answer but I presume you would use a corer to cut a hole in the potato before slicing and frying.
